Today, Dawn Potter Acupuncture in Clearwater is sharing a recipe based on Chai. “Masala chai” is a traditional Indian beverage made with black tea, milk, water, and a blend of spices. This recipe is vegan, dairy-free, gluten-free, and low-sugar. Various modifications can be made to reduce sugar further or change the type of milk used. For this recipe, you’ll need the following ingredients:

Ingredients

  1. 1 ½ cups unsweetened almond milk (or any plant-based milk)

  2. ¼ cup chia seeds

  3. 1 tsp vanilla extract

  4. 1 tsp cinnamon

  5. ½ tsp ground ginger

  6. ¼ tsp ground cardamom

  7. ¼ tsp ground nutmeg

  8. ¼ tsp ground cloves

  9. 1-2 tsp maple syrup (optional, or use stevia/monk fruit for lower sugar)

  10. ⅛ tsp salt


Once you have all your ingredients ready and measured out, you’ll follow these instructions:


Instructions

  1. Warm the milk slightly in a small saucepan (do not boil). This helps the spices blend better.

  2. Whisk in the spices, vanilla, and sweetener until well combined.

  3. Add the chia seeds and stir well. Let sit for 10 minutes, stirring occasionally to prevent clumping.

  4. Cover and refrigerate for at least 4 hours or overnight.

  5. Stir before serving.

  6. If you want anything extra added, you can top with nuts, unsweetened coconut, or even a few berries.

Gluten-Free Vegan Chai Spice Overnight Oats Recipe ½ Cup Gluten-Free Oats

1 Tablespoon Chia Seeds

⅔ Cup Plant-Based Milk

1 Teaspoon Vanilla Extract

¼ Cup Plant-Based Yogurt

½ Teaspoon Cinnamon

¼ Teaspoon Ginger

⅛ Teaspoon Nutmeg

⅛ Teaspoon Allspace 1 Tablespoon Maple Syrup As mentioned before, this recipe is extremely easy and doesn’t even require heat. Simply add all the ingredients to a container with a lid (we prefer a mason jar) and shake well. Sit inside your refrigerator overnight and by morning you should have a perfect meal. Wishing it was a bit warmer? No problem, you can heat it up as well if you prefer (although it is not required).

  • 1 Cup Quinoa (Rinsed)

  • ¼ Cup Frozen Carrot Bits

  • ¼ Cup Frozen Green Peas

  • ¼ Cup Chopped Kale

  • ¼ Cup Pineapple Bits

  • ¼ Cup Coconut Aminos

  • ¼ Cup Pineapple Juice

  • 1 Cup Water

  • 1 Cup Vegetable Broth

  • 1 Teaspoon Ginger Powder

  • 1 Teaspoon Garlic Powder

  • Pinch Crushed Red Pepper (Optional)

  • ¼ Cup Green Onion (Garnish)


Combine all ingredients except green onions in a large pot, bring to boil, reduce to simmer and cook for 20 minutes. Add green onion and mix then serve.
